too many.

this post is titled "too many". that's because there were too many cute pics of the chubbers to not show them all. :)

we went to grandma and grandpa's for dinner the other night and they had put the tramp up for the season so we went out for a jump. the chubbers LOVES being bounced on the tramp.

last night we finally broke down, got down to the chubbers level, and went exploring for lost toys. we went looking under the couches - a very scary place to go, if you ask me. the chubbers wanted to help the hubbers with the flashlight.

being the first mother's day that we had the chubbers here (last year i was pregnant), i wanted a good picture of him and i together. after i saw them all, i couldn't decide which one i liked the best - and the chubbers looks so different in all of them, so i decided to post them all.

for mother's day we celebrated with the hubber's mom yesterday and we'll celebrate with my mom tonight. i hope you all had a wonderful mother's day!

and here is this week's recipe - T.D.F.(to die for!!!)
i forgot where i got this recipe from - so whoever's it is - i give you full credit! we ate this and thought we had take-out from a restaurant - that's how good it tasted.


Chicken Florentine

Ingredients:
* 4 skinless, boneless chicken breast halves (i cut them in strips first - easier and faster to cook)
* 1/4 cup butter
* 3 teaspoons minced garlic
* 1 tablespoon lemon juice
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 tablespoon Italian seasoning
* 1/2 cup half-and-half
* 1/2 cup grated Parmesan cheese
* 2 (13.5 ounce) cans spinach, drained (I used fresh spinach in a bag)
* 4 ounces fresh mushrooms, sliced
* Sun dried Tomatoes
* 2/3 cup real bacon bits (i didn't put bacon bits in)
* 2 cups shredded mozzarella cheese

1. Preheat oven to 350.
2. Sauté the mushrooms and spinach in a little butter. Place in the bottom of the 9x9 pan. (i used the pan size just under the 9 x 13 - what size is that anyway?)
3. Melt 1/4 cup butter in a medium saucepan over medium heat. Stirring constantly, mix in the garlic, lemon juice, cream of mushroom soup, Italian seasoning, sun dried tomatoes, half-and-half, and Parmesan cheese.
4. Pour some of the mixture over the spinach & mushrooms, place the chicken on top, and then pour the rest of the mixture over the chicken. Top with bacon.
5. Place in oven for 30 minutes, top with mozzarella cheese and bake for another 10 minutes.
6. Serve over your favorite pasta
