the chubbers likes a good piece of giraffe every once in a while.
here's what we had for dinner last night:
Cold Sesame Noodles – from America’s Test Kitchen via Ann B.
5 T. sesame seeds
5 T. Soy Sauce
¼ c. chunky peanut butter
2 T. rice vinegar
2 T. light brown sugar
1 T. grated fresh ginger
2 garlic cloves, minced
1 t. Tabasco sauce
¼ c. hot water
1 T. salt
1 lb. spaghetti
4 scallions, sliced thin
1 med. Carrot, peeled and grated
1 red bell pepper, seeded, sliced thin
Toast sesame seeds over medium heat, stirring until golden, fragrant, about 10 minutes. Reserve 1 T of seeds. Puree remaining 4 T. of seeds with soy sauce, peanut butter, vinegar, sugar, ginger and cloves, Tabasco sauce about 30 seconds. With machine running add the hot water 1 T at a time until sauce has the consistency of heavy cream (you may not need all of it).
Cook noodles in 6 qts of boiling water seasoned with the salt until tender, about 4 minutes. Drain. Rinse noodles under cold water until cool. Shake out excess water and transfer to large bowl. Add vegetables and sauce, toss to combine. Arrange on platter and sprinkle with remaining sesame seeds.
after we ate this, the hubbers told me "you know, this is one of those recipes that you don't want to eat all the time".
i think i took it the right way.
he went on to tell me that what he meant was - it's good - but you don't want to eat it all the time - like cheese quesadillas.
and p.s. - HAPPY BIRTHDAY TO MY MOTHER!!!!!
I LOVE YOU!!!!
