this week's recipe: grilled veggie quesadillas - so easy!
we had these last night for dinner and they were so good. you can do any kind of variation on this and i'm sure they'll still be fabulous.
so - here's what we did -
thinly slice one green pepper, one red pepper, and one red onion.
cook those in a frying pan on medium heat for about 8 minutes with about 1 tbsp of oil - or until they're nice and soft
meanwhile, get some tortillas out and spread softened cream cheese on one half.
when the veggies are done, put them in the tortillas and fold in half - like a taco.
lay the filled tortillas down on a cookie sheet, cover with a little cheese, and put in the oven at like 400 for 5 or so minutes - until the cheese is melted on top.
so tasty!
i wanted to put grilled chicken inside, but the hubbers didn't want to go out in the snowstorm to grill. weird, can't figure out why he wouldn't do that. :)
also - i was trying to be frugal and get rid of some stuff we had in our fridge. so we threw in kidney beans and cooked rice with the veggies. that way, our quesadillas were more filling.
